Irish Stew with Chicken Recipe

I have always celebrated St. Patrick’s Day even though I’m not Irish. I have always been drawn to Irish guys and ended up marrying the sweetest 1/2 Irishman that I have ever met! We made a beautiful a 1/4 Irish daughter!!! In homage to my daughter’s heritage, I’m going all in on St. Patrick’s Day! Leaning about the holiday and making traditional Irish dishes with modern spins that make it simple to make in busy mom’s kitchen.

I went to the store for the ingredients and realized how much Leg of Lamb costs. I decided to make the Irish Stew with Chicken instead.

I cooked this is my brand new casserole Crock Pot. It works pretty great and I am excited to make more crock pot casseroles and other dishes like this Irish Stew Slow Cooker recipe.

Irish Stew with Chicken Recipe

Irish Stew (9 of 12)

Ingredients

3 Cups Beef Broth
2 Tbsp Beef Broth
4 Chicken Breasts, cut into small cubes
8 Red Potatoes, scrubbed & halved (sweet potatoes)
2 Cups Pearl Onions, peeled
2 Parsnips, quartered and cut into slices
1 1/2 Cups Carrots, peeled & sliced into chunks
1 Small Turnips, wedged
1 Bay Leaf
1 tsp salt
1/4 tsp pepper
3 tbsp All Purpose Flour
2 Cups Frozen Peas, thawed
1/4 Cup Parsley

Instructions

Combine 3 cups beef broth, chicken, potatoes, onions, parsnips, carrots turnip, bay leaf, salt and pepper in the slow cooker on low for 10 hours or high for 6 hours.

Using a whisk, mix together 2 tbsp beef broth and 3 tbsp flour.
Take 4 tbsp out of the broth from the slow cooker and whisk it into the beef and flour mixture.
Add the flour mixture back into the slow cooker and mix together.
Remove Bay Leaf
Add 2 Cups frozen peas and 1/4 cup parsley and cook for another 1/2 hour.

I cooked this is Irish Stew in the Crock Pot. It is an inexpensive and Low Calorie Irish Stew Slow Cooker recipe made witch chicken instead of Lamb or Beef.

  2. Thanks for the idea of Chicken stew for St. Paddy’s Day. I don’t eat red meat and originally planned on cooking a brisket for my dinner guests and a chicken dish from myself…now I can make just 1 dish for all to enjoys! I
