Chocolate Dipped Cookies Recipe

I love making these chocolate dipped cookies with the help of my daughter on the weekends. I usually make a batch big enough to eat a couple and bring the rest to school for the teachers. They are made in the way that traditional Italian cookies are made when they dipped in chocolate and then sprinkles. Usually, they are made with a piping bag and not cookie cutters, but I decided to try something different and use a heart-shaped cookie cutter to make jelly sandwich shortbread cookies that are then dipped in chocolate and sprinkled with colored sprinkles.

Ingredients

These are the ingredients you’ll need to make the cookies. 

  • lb unsalted butter, at room temperature 
  • cups granulated sugar
  • teaspoons pure vanilla extract
  • 1 Large Egg Yokes
  • teaspoon almond extract
  • 12cups all-purpose flour
  • cups semi-sweet chocolate chips
  • 1/2 cup seedless jam
  • colored sprinkles

How to Make Chocolate Dipped Cookies

  1. Bring butter to room temperature by leaving it on the counter. 4 sticks of butter are 1 pound of butter.
  2. Using a mixer, mix together the room temperature butter and 2 cups of sugar to cream them together.
  3. Add the egg yolks, vanilla and almond extract and mix well.
  4. Then, add flour in slowly, mixing only until flour disappears into the mix.
  5. Preheat oven to 350 degrees F.
  6. Put the dough in between 2 pieces of plastic wrap. Roll out the dough to about a 1/8 inch thick with a rolling pin.
  7. Place the dough in the fridge for 4 hours.
  8. Take the dough out and peel off the top layer of
  9. Position cookies approximately 1″ apart. Bake the cookies for 10 minutes. The cookies should still be pale.
  10. Allow the cookies to cool.
  11. When cookies are cool, spread 1 tsp of jam in the middle of the cookie.
  12. Top with another cookie making a cookie sandwich.
  13. Place cookies in the fridge for several hours covered before decorating.
  14. Using a double boiler, melt the chocolate. When chocolate chips are melted, stir well.
  15. Dip one end of cookie sandwich into chocolate
  16. Place chocolate dipped cookies on a rack and let sit for a minute before you sprinkle the chocolate on the cookie with colored sprinkles.

What if I don’t like jam in my cookies? 

If you don’t like the jam/jelly filling, you can always skip that step. These cookies taste just as wonderful as sugar cookies simply dipped in chocolate. 

These Cookies are So Versatile

You can have so much fun with these cookies. Experiment with different flavors of jam and jelly. Or, use a cream cheese filling for a little different texture. 

You can also personalize them for each holiday with different colored sprinkles. 

How long do these cookies last? 

If you store them in an airtight container, they will stay fresh and delicious for up to one week. You can also freeze them if you don’t think you’ll eat them within the week.
