Instant Pot Cauliflower Mash Potatoes

I have been buying cauliflower mash potato from Trader Joe’s for quite some time. This week, I decided to perfect my own Instant Pot Cauliflower mashed potatoes.

CAULIFLOWER Mash Potatoes

Cauliflower is an amazingly nutritious veggie that my family does not like on its own. I get it because it smells funny and I am not that big of a fan myself. I have to fool my mind into thinking it is something else.

Let’s talk about why you should be eating cauliflower even if you don’t love it. It has cancer-fighting properties.

It contains something called sulforaphane, a sulfur compound that has been shown to kill cancer stem cells, thereby slowing tumor growth. 

According to the National Cancer Institute:“Indoles and isothiocyanates have been found to inhibit the development of cancer in several organs in rats and mice, including the bladder, breast, colon, liver, lung, and stomach.”

Cauliflower is an essential source of dietary fiber for digestive health. High fiber diets are supposed to help lower cholesterol. Most of us need more nutrients in our body to function better.

Eating cauliflower regularly is a simple way to get these much-needed nutrients into your body. For instance, one serving of cauliflower contains 77 percent of the recommended daily value of vitamin C.

It’s also a good source of vitamin K, protein, thiamin, riboflavin, niacin, magnesium, phosphorus, fiber, vitamin B6, folate, pantothenic acid, potassium, and manganese.

Instant Pot Cauliflower Mash Potato Recipe

Ingredients

1 Head Cauliflower
6 ounces Shredded Parmesan Cheese
1 Tbsp Low Fat Sour Cream
3 tablespoons of butter
1/2 teaspoon salt
1/4 teaspoon of black pepper
1 Clove of Garlic
Garnish with Chives

Start by making your own vegetable broth with saved extra veggie cuttings from the freezer or use the green part of the head of cauliflower.

Put the instant pot on soup for 25 minutes with the 4 cups of water and the frozen cuttings or the green part of the head of cauliflower.

Once the steam release naturally, strain the veggies and keep the veggie broth.

Put the veggie broth into the instant pot again and add in the cauliflower head.

Put the instant pot on rice for 2 minutes on low pressure.

Let the instant pot vent naturally.

Drain the cauliflower saving the broth for later use in another recipe like ——.

In a food processor, dice 1 garlic clove.

Once the garlic is chopped up into tiny bits, place the cooked cauliflower, 3 tablespoons of butter, 1 tablespoon of sour cream, 1/2 teaspoon salt, 1/4 teaspoon of black pepper, and 6 ounces of shredded Parmesan cheese.

Garnish with chopped chives.

    I’m definitely putting this on the menu! We need a cauliflower mash recipe for Dad who’s coming to dinner sometime soon. He’s low carb and this would be perfect.
