Keto Fried Rice – Low Carb Cauliflower Rice

The fried rice that comes from my favorite Asian Fusion restaurant is made with these vegetable ingredients and actually works really well for a Keto Fried Rice where you swap out the rice for cauliflower rice. You will fall in love with this low carb fried rice. It tastes like fried rice with fewer calories and carbs.

Make this Keto Fried Rice as a side dish with no meat or as a main course with chicken, steak or pork. It is gluten free and low carb!

This side dish or main course is the ideal choice on the Keto Diet because 1 cup is only 8 carbs and 5 net carbs with 3 coming from fiber. We absolutely love turning our Chinese food favorites into more healthy dishes. 

This Keto fried rice is a full meal if you add protein. Since proteins is a must on the Keto Diet, you can choose any meat to add to the dish. I love chicken fried rice, pork fried rice, and beef fried rice. You can even get crazy and add some bacon.

Low Carb Fried Rice Ingredients 

To keep this fried rice recipe low carb, you need to skip the peas and carrots that are in so many fried rice recipes. Also, I have never seen peas and carrots in a fried rice at a Chinese restaurant. It is so weird to me that these carby veggies are in almost all the fried rice recipe that I have seen online.

The ingredients that I included in the Keto Fried Rice are low carb and the same vegetables that are included in the fried rice from my favorite Asian Restaurant. The low carb ingredients are yellow onions, red bell peppers, green onions, garlic, and green beans. 

Coconut Aminos 

To keep this low carb recipe gluten free, I used Coconut Aminos instead of the traditional soy sauce. Soy has so many negatives that we don’t even keep it in the house anymore. Coconut Aminos are gluten free, vegan, has No MSG and contains 17 Amino Acids.

Cauliflower Rice 

I used fresh cauliflower rather than pre-made cauliflower rice. It is cheaper to rice the cauliflower yourself, but it does make a mess to make it.

How to Make Cauliflower Rice?

Start by cutting the base and leaves off of fresh cauliflower.

Then, cut up cauliflower so that it is broken up into small bunches that will fit in a food processor.

Add the cauliflower to the food processor and pulse until the cauliflower is a rice consistency.

How to Make Keto Fried Rice? 

To make cauliflower fried rice recipe, start by breaking the eggs into a bowl and beat until combined.

In a frying pan, add avocado oil.

Scramble the eggs and set aside.

If the egg stuck to the pan, clean the frying pan.

Dice the green beans, red peppers, and onions.

In the frying pan, start by adding avocado oil.

Then, add the red peppers and yellow onions.Saute onions

Saute’ for 10 minutes on medium until the onions are translucent.

Add crushed garlic to the pan. Saute for 2 minutes.

Then, add green beans. Cook for 2 minutes.

Next, add salt, pepper, and coconut aminos.

Then, add the cauliflower rice.

Mix the ingredients and cook for 2 minutes.

Serve hot with green onions to garnish.

Ingredients

  • 1 head Cauliflower
  • 1/2 cup green beans
  • 1 red pepper
  • 1/2 yellow onion
  • 2 Green onions
  • salt
  • pepper
  • 2 tbsp coconut aminos
  • 2 tbsp avocado oil
  • 2 eggs

Instructions

  • Break the eggs into a bowl and beat until combined.
  • In a frying pan, add avocado oil.
  • Scramble the eggs and set aside.

  • Dice the green beans, red peppers, and onions.
  • In the frying pan, start by adding avocado oil.

  • Mix the ingredients and cook for 2 minutes.
  • Serve hot with green onions to garnish.
