Health Benefits of Pineapples

Pineapples are low-calorie fruits that are filled with lost of nutrients like bromelain, protein, carbohydrates, soluble and insoluble dietary fiber. The vitamins in pineapples include vitamin A, vitamin C, beta-carotene, thiamin, vitamin B5 (pantothenic acid), vitamin B6, and folate and Minerals like potassium, copper, manganese, calcium, sodium, and magnesium.

Pineapple is said to have the ability to reduce the inflammation of muscles and joints. These fruits contain a rare proteolytic enzyme called bromelain, which helps break down of complex proteins and has anti-inflammatory effects that help with arthritis.

Grilled Pineapple Chicken Kabobs Ingredients

 How to Make Pineapple Chicken?

Soak skewer sticks in water for 30 min. to prevent burning

Turn on BBQ grill to medium heat

Grilled ChickenBegin to cut Chicken into 1 inch thick chunks

 

 

 

 

 

 

Slice the pineapple into chunks. Pineapple Cubes

 

 

 

Dice the onions into chunks using the natural width of your onion as your guide

 

 

 

Remove the seeds from  the peppers and cut them up into 1 inch pieces.

In a medium-size bowl, add Pina Colada mix, seasonings and soy sauce whisk to blend.

Begin to assemble skewer pineapple first then chicken, onion, and peppers.

Repeat process leaving 1 1/2 inches on both ends.

Salt and pepper to taste

Place skewers on the grill and begins to add the Pina colada sauce to each skewer while cooking.

Rotate often while adding more and more sauce.

Cook 15-20 min. turning often.

Sprinkle Roasted coconut on skewers once you pull them off the grill

Ingredients

  • 5 Chicken Breasts boneless skinless
  • 1 Pineapple
  • 1 Red Pepper
  • 1 Yellow Pepper
  • 1 Red Onions
  • 1 Cup Pina colada mix
  • 3 TBSP Soy sauce
  • 2 TSP Garlic powder
  • 1 TSP Cumin
  • 1 TSP Chili Powder
  • Salt and Pepper

Instructions
