As I keep baking and cooking all my favorite fall recipes, I have to share this one with you. My Pumpkin pudding is so velvety and creamy. It’s a pretty sweet dessert that can also double as a delightful breakfast too. Plus the chia seeds make this pudding packed with nutrients and vitamins.

My pumpkin chia pudding recipe is made from scratch. No boxed pudding mixes to be seen! I created a gluten-free recipe with absolutely no flour of any kind. Plus, it’s super simple to make because there isn’t any cooking required.

  • 1/4 cup chia seeds

  • Pumpkin spice (you can also make your own)

I love finding new ways to cook pumpkin because there are so many health benefits to it. Here are some of my favorites (and an excuse to keep cooking with it!)

Weight Benefits

Since pumpkin is so high in fiber, it makes you feel fuller longer and it slows down your digestion. In fact, there are about 7 grams of fiber in 1 cup of pumpkin. Plus, with all the fiber, it is also low calorie! So you are actually eating fiber that will help you burn calories without adding more to the mix.

Eye Benefits

Pumpkin is full of beta-carotene which is converted to vitamin A in the body. Just like everyone has probably heard that orange in carrots has a ton of vitamin A, so does the orange in pumpkin. Pumpkin-lovers rejoice – one cup of pumpkin has 200% of recommended daily intake vitamin A!

Immune System

Pumpkin is a fantastic source of Vitamin C too. Vitamin C is wonderful for fighting colds and other viruses. Plus all that vitamin A is also a powerful infection-fighting nutrient.

How to Make Gluten-Free Pudding

Sometimes a homemade pudding recipe might have flour as a thickening agent. Not mine! This pudding recipe only has pumpkin, almond milk, and chia seeds.

You can make gluten-free pumpkin chia pudding so easily because pumpkin puree is already pretty creamy. The chia seeds add a thicker texture and the almond milk creates a creamy taste.

Pumpkin Pudding Cooking Notes

Try out different variations of my recipe if you want.  I love how sweet the maple syrup makes it. If you prefer a less-sweet pudding, cut the syrup down by half.

How To Make Dairy-Free Pudding

Honestly, you don’t need dairy milk to make pudding. I love almond milk. You can also use coconut milk or soy milk in my recipe in the same quantity.

I think the coconut milk makes it a little more exotic tasting. I prefer the flavor of the almond milk.

Health Benefits of Chia Seeds

Chia seeds are often put in recipes with claims of helping to aid in weight loss. How you consume the chia seeds will help determine how much it actually does help with the weight loss.

Chia seeds really are packed with nutrients though. They are high in fiber and protein. Plus, they have healthy fats (Omega-3s which are great for your brain).

And if you are looking for a plant-based source of calcium, chia seeds are amazing! One ounce of chia seeds contains 18% of suggested daily intake of Calcium.

  • In a mason jar, mix the one cup of almond milk, two tablespoons of maple syrup, 1/4 cup of chia seeds, one tablespoon of pumpkin puree, 1/4 reason of pumpkin pie spice, and one tablespoon of vanilla extract.
