- 4 Cups Watermelon diced
- 1 Cup Red bell peppers diced
- 1 Cup Yellow bell peppers diced
- 1/2 Poblano peppers diced
- 1 tbsp Fresh Mint minced
- 1 tbsp Fresh Cilantro minced
- 1 Cup Cucumbers diced
- 1/2 Cup Scallions diced
- 1/2 tbsp Salt
- 1 tbsp Sugar
- 2 1/2 tbsp Lime juice
- 1 tbsp Olive oil
Place all ingredient in a large bowl and toss.
Served chilled or at room temperature with chips or as a salad.
Let sit in the fridge for at least an hour before serving.
