Ingredients

  • 3 Zucchini shredded into zoodles
  • 6 oz Artichoke Hearts
  • 1 Cup Grape Tomatoes sliced in half
  • 1/2 Cup Kalamata Olives chopped
  • 1/2 Cup Fresh Basil chopped
  • 1/4 Cup Oregano chopped
  • 1 Tbsp Roasted Red Pepper diced

Mediterranean Dressing

  • 2 Tbsp Extra Virgin Olive Oil
  • 1/2 Tbsp White Vinegar
  • 1 Garlic Clove grated
  • 1/2 tsp Pink Himalayan Sea Salt
  • 1/8 tsp Fresh Ground Black Pepper
  • 1 Lemon zested & juiced
  • 1/8 tsp Red Pepper Flakes

Instructions

  • Wash and chop all vegetables.
  • Zest and juice the lemon and grate the garlic using a microplane.
  • Use the spiralizer to make zucchini noodles.
  • In a large bowl, add all the ingredients and toss the pasta together.
