Ingredients

  • 4 Cups Watermelon diced
  • 1 Cup Red bell peppers diced
  • 1 Cup Yellow bell peppers diced
  • 1/2 Poblano peppers diced
  • 1 tbsp Fresh Mint minced
  • 1 tbsp Fresh Cilantro minced
  • 1 Cup Cucumbers diced
  • 1/2 Cup Scallions diced
  • 1/2 tbsp Salt
  • 1 tbsp Sugar
  • 2 1/2 tbsp Lime juice
  • 1 tbsp Olive oil

Instructions

  • Place all ingredient in a large bowl and toss.
  • Served chilled or at room temperature with chips or as a salad.
  • Let sit in the fridge for at least an hour before serving.
