  • 4 Zucchinis
  • 6 Slices Goat Cheese Whole Foods Pre-Packaged or from the deli counter
  • 1 Pint Tomatoes Cherry
  • Olive Oil Spray


  • Pre-heat oven to 350 degrees.
  • Wash and slice zucchinis to ¼ inch round slices.
  • Slice Goat cheese into 4 squares.
  • Cut the cherry tomatoes in half.
  • Spray the cookie sheet with the olive oil spray.
  • Place the zucchinis on the cookie sheet first.
  • Put 3 pieces of tomato on each zucchini with the skin facing up.
  • Place the goat cheese square on top of tomato.
  • Bake for 15 minutes checking at 10 minutes.
  • The zucchinis are ready if the thick goat cheese is melted.
