  • 1 ½ Onion
  • 6 Tomatoes
  • 2 Carrots
  • 2 Cups vegetable broth
  • 3 Garlic cloves minced
  • 3 Tbsps olive oil
  • 2 Tsps paprika
  • 2 Tsps basil leaves minced
  • Basil leaves for garnish
  • 1/2 tsp Salt to taste
  • 1/4 TSP PEPPER


  • In cutting board mince the garlic cloves and finely dice the onion, tomatoes, and carrots.

  • In a pot over medium heat pour the olive oil and heat for 1 minute.
  • Incorporate the onion, carrot, paprika, salt, and pepper. Stir and cook for 10 minutes or until tender.
  • Add the tomatoes and garlic cloves, stir and cook for 3 minutes.
  • Add the vegetable broth and minced basil leaves and cook for another 30 minutes.
  • Pour into bowls, top with more pepper, some parmesan cheese, and a basil leave.
  • Serve and enjoy.
