Bring butter to room temperature by leaving it on the counter. 4 sticks of butter are 1 pound of butter.
Using a mixer, mix together the room temperature butter and 2 cups of sugar to cream them together.
Add the egg yolks, vanilla and almond extract and mix well.
Then, add flour in slowly, mixing only until flour disappears into the mix.
Preheat oven to 350 degrees F.
Put the dough in between 2 pieces of plastic wrap. Roll out the dough to about a 1/8 inch thick with a rolling pin.
Place the dough in the fridge for 4 hours.

Position cookies approximately 1" apart. Bake the cookies for 10 minutes. The cookies should still be pale.
Allow the cookies to cool.
When cookies are cool, spread 1 tsp of jam in the middle of the cookie.
Top with another cookie making a cookie sandwich.
Place cookies in the fridge for several hours covered before decorating.
Using a double boiler, melt the chocolate. When chocolate chips are melted, stir well.
Dip one end of cookie sandwich into chocolate
Place chocolate dipped cookies on a rack and let sit for a minute before you sprinkle the chocolate on the cookie with colored sprinkles.
Store in an airtight container one week.
