Paleo Creamed Tuna on Toast

Paleo Creamed Tuna on Toast recipe made with peas, ghee, and coconut milk so that you can eat it on the paleo diet and on bread or sweet potato toast

Ingredients

  • 2 Tbsp Ghee
  • 1/4 Cup Coconut Flour
  • 13.3 oz Unsweetened  Coconut Milk Canned
  • 8 oz Tuna 2 pouches
  • 1 Cup Peas
  • 1/4 tsp  Cayenne Pepper
  • 1 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

  • Melt the 2 tablespoons of ghee in a saucepan over medium heat.
  • Cook the peas in the microwave according to the instructions.
  • Once the ghee is melted, add in 1/4 cup of coconut flour and whisk together.
  • Add in 1/4 tsp cayenne pepper, 1/4 tsp black pepper, and 1 tsp salt whisking constantly.
  • Gradually stir in the coconut milk while whisking constantly.
  • Continue cooking the mixture stirring constantly until it thickens and begins to bubble. (approximately 6 minutes depending on the stove)
  • Drain the water from the two Pouches Blue Harbor Tuna.
  • Add the tuna to the coconut mixture breaking up the tuna into bite-size chunks.
  • Next, add in the cooked peas and mix together.
  • Served on top of your toast of choice. If you are avoiding carbs, you can serve the tuna on top of zoodles or sweet potato toast.

Notes

This creamed tuna on toast with peas also goes great in a phyllo appetizer cups. Use a spoon to fill the phyllo cups and heat in the oven as instructed.
