Banana Loaf

Don't waste the bananas you have in your kitchen! Make this Easy Banana Loaf recipe instead with your over ripe bananas left over from the week's lunch.

Ingredients

  • 1 Box Yellow cake
  • 1 Banana ripe
  • 3 Bananas overripe
  • 2 Eggs
  • 5 Tbsp. Butter melted
  • 2 Tbsp. Brown Sugar
  • whipped topping
  • cinnamon

Instructions

  • Preheat oven to 350 F. 
  • In a bowl, combine the mashed over ripe bananas.
  • Add the eggs and mix well
  • Add the yellow cake and mix to combine.
  • In two loaf pans, spray well or line with parchment
  • Cut the ripe banana into slices and line the bottom of both loaf tins
  • In each loaf tin, sprinkle 1 tablespoon of brown sugar
  • Drizzle one tablespoon each of the butter over the bananas and brown sugar
  • Add the remaining last tablespoon of butter to the batter
  • Evenly distribute the cake batter into both loaf tins
  • Bake at 350 for approximately 30 – 35 minutes or until a toothpick comes out clean.
  • After cook time is complete, remove from oven and let loaves sit for approximately 5 minutes
  • Turn them out, upside down, onto large platters and carefully remove the parchment paper if you used it.
  • Let the loaves completely cool and serve with whipped topping and a sprinkle of cinnamon.
