Easy Banana Loaf Recipe

This easy Banana loaf is my favorite dessert to make when my banana start getting a little too ripe. Sometimes I overestimate how many bananas my daughter and I will eat in a week. I hate to toss the bananas so I decided to make this awesome easy banana loaf recipe.

I made 2 banana loaves with these banana loaf pans so that we can have one at the house and then either slice it up to include in my daughter’s lunch box or bring it to my friend’s house when she has people over.

 

Easy Banana Loaf Recipe

Ingredients

1 Box Yellow cake
1 Ripe Banana
3 Overripe Bananas
2 Eggs
5 Tbsp. Butter, melted
2 Tbsp. Brown Sugar
Whipped Topping
Cinnamon

Directions

Preheat oven to 350
In a bowl, combine the mashed over ripe bananas.

Add the eggs and mix well
Add the yellow cake and mix to combine.
In two loaf pans, spray well or line with parchmentCut the ripe banana into slices and line the bottom of both loaf tins.

Banana Loaf Recipe (3 of 14)
In each loaf tin, sprinkle 1 tablespoon of brown sugar

Banana Loaf Recipe (6 of 14)
Drizzle one tablespoon each of the butter over the bananas and brown sugar
Add the remaining last tablespoon of butter to the batter
Evenly distribute the cake batter into both loaf tins

Banana Loaf Recipe (7 of 14)
Bake at 350 for approximately 30 – 35 minutes or until a toothpick comes out clean.
After cook time is complete, remove from oven and let loaves sit for approximately 5 minutes
Turn them out, upside down, onto large platters and carefully remove the parchment paper if you used it.

Let the loaves completely cool and serve with whipped topping and a sprinkle of cinnamon.
