Soak the chicken for 15 to 30 minutes to make it more moist. Keep it in the fridge while you do it so that the chicken stays cold.
Strain the chicken and add to a large bowl for mixing.
Dice the garlic in a food processor.
Add the diced garlic, ranch seasoning packet, and 1 cup of almond flour to the mixing bowl.
Mix together the ingredients by needing them together. Add water a little at a time if the meat seems dry. I added about 1 tbsp. The longer you soak the meat, the less likely you will need to add water here.
Roll the meatballs into smalls balls and place in the air fryer.
Set the air fryer to 360 degrees Fahrenheit for 5 minutes.
Once the meatballs are done, add Frank's Hot Sauce to a large bowl allowing it to cover the bottom of the bowl entirely.
Roll the meatballs into the hot sauce.
Add the meatballs back into the air fryer.
Set the air fryer to 360 degrees Fahrenheit for 5 minutes.
Mix together ranch dressing or blue cheese with blue cheese crumbles.
Serve the meatballs in a dish or basket and top with dressing and blue cheese crumbles mixture.
