Ingredients

  • 1 cup flour
  • 1 cup Cornmeal P.A.N.
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup whipping cream
  • 1/2 cup unsalted butter melted
  • 1/2 cup sugar
  • 2 eggs large
  • 1 tbsp honey
  • 2 jalapeños seeded & diced
  • 1/4 cup cheddar cheese shredded

Instructions

  • Preheat oven to 375 F.
  • Line cupcake tray with non-stick liners.
  • In a large bowl, mix together flour, cornmeal, baking soda and salt.
  • In another bowl, whisk together whipping cream, melted butter, sugar, eggs and honey.
  • Pour mixture over the flour mix and stir using a rubber spatula just until moist.
  • Gently toss in diced jalapeños and cheese.
  • Scoop the batter evenly into the muffin tray.
  • Bake muffins for 15-17 minutes.
