Brunch Menu with Jalapeno Cornbread Recipe

Brunch is probably my favorite meal of the week. I wish I had time to host a brunch group every Sunday. In fact, I have a great idea that I need to discuss with my friends. We can each host a brunch every month. Instead of calling it book club or a play date, we can call it brunch club. It would help me sharpen my cooking skills and help all of us on our culinary exploration.

Jalapeno-Cornbread-Recipe

My brunch menu is filled with yummy favorites with a little bit of a twist. I started the meal with a Filet’s cut into 2 thinner pieces. Then I grilled them and served with a Basil Chimcurri Sauce made from my Basil growing in my herb garden.

With the steak, I served Jalapeño Cornbread.  The Jalapeños are also from my garden and P.A.N. Cornmeal. It was quick and easy to grab things from the garden and thing like P.A.N. Cornmeal  and Flour that are always in my pantry. P.A.N. was such a great fit for this recipe as it is gluten-free and is pre-cooked.  It is always a pleasure to work with. Gotta love when you can grab fresh veggies from your backyard.

Then, I served an Egg Quiche with tomatoes and spinach with Sake Mimosas with strawberry garnish.

Jalapeno Cornbread Recipe

Ingredients

  • 1 cup flour
  • 1 cup Cornmeal P.A.N.
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup whipping cream
  • 1/2 cup unsalted butter melted
  • 1/2 cup sugar
  • 2 eggs large
  • 1 tbsp honey
  • 2 jalapeños seeded & diced
  • 1/4 cup cheddar cheese shredded

Instructions

  • Preheat oven to 375 F.
  • Line cupcake tray with non-stick liners.
  • In a large bowl, mix together flour, cornmeal, baking soda and salt.
  • In another bowl, whisk together whipping cream, melted butter, sugar, eggs and honey.
  • Pour mixture over the flour mix and stir using a rubber spatula just until moist.
  • Gently toss in diced jalapeños and cheese.
  • Scoop the batter evenly into the muffin tray.
  • Bake muffins for 15-17 minutes.

Jalapenos Cornbread Recipe

Ingredients 
1 cup flour
1 cup P.A.N. Cornmeal
1/2 tsp baking soda
1/2 tsp salt
1 cup whipping cream
1/2 cup unsalted butter (melted)
1/2 cup sugar
2 large eggs
1 tbsp honey
2 jalapeños (seeded & diced)
1/4 cup medium shredded cheddar cheese

Instructions
Preheat oven to 375 F.
Line cupcake tray with non-stick liners.
In a large bowl, mix together flour, P.A.N. Cornmeal , baking soda and salt.
In another bowl, whisk together whipping cream, melted butter, sugar, eggs and honey.
Pour mixture over the flour mix and stir using a rubber spatula just until moist.
Gently toss in diced jalapeños and cheese.
