Irish Stew with Chicken Recipe

I cooked this is Irish Stew in the Crock Pot. It is an inexpensive and Low Calorie Irish Stew Slow Cooker recipe made witch chicken instead of Lamb or Beef.

Ingredients

  • 3 Cups Beef Broth
  • 2 Tbsp Beef Broth
  • 4 Chicken Breasts cut into small cubes
  • 8 Red Potatoes scrubbed & halved (sweet potatoes)
  • 2 Cups Pearl Onions peeled
  • 2 Parsnips quartered and cut into slices
  • 1 1/2 Cups Carrots peeled & sliced into chunks
  • 1 turnips wedged
  • 1 Bay Leaf
  • 1 tsp salt
  • 1/4 tsp pepper
  • 3 tbsp Flour All Purpose
  • 2 Cups Peas frozen, thawed
  • 1/4 Cup Parsley

Instructions

  • Combine 3 cups beef broth, chicken, potatoes, onions, parsnips, carrots turnip, bay leaf, salt and pepper in the slow cooker on low for 10 hours or high for 6 hours.
  • Using a whisk, mix together 2 tbsp beef broth and 3 tbsp flour.
  • Take 4 tbsp out of the broth from the slow cooker and whisk it into the beef and flour mixture.
  • Add the flour mixture back into the slow cooker and mix together.
  • Remove Bay Leaf
  • Add 2 Cups frozen peas and 1/4 cup parsley and cook for another 1/2 hour.
