Slow Cooker Paleo Chili Recipe

This delicious and easy to make paleo chili recipe is not only vegan, but it is also Whole 30 compliant & only takes 4 hours in the slow cooker or crockpot

Ingredients

  • 114 g sweet potato medium size, peeled & diced
  • 1/2 cup red pepper diced
  • 1/2 cup green pepper diced
  • 1/2 cup carrots diced
  • 1/4 cup red onions diced
  • 2 cups vegetable stock
  • 14.5 oz Canned Diced Tomatoes
  • 2 tbsp red curry paste
  • 1/4 cup canned coconut milk
  • 2 tsp garlic minced
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  • Dice peppers, sweet potato, onion, and carrot, and put in the bottom of a slow cooker. 
  • Add in diced tomatoes, curry paste, garlic, pepper, and vegetable stock. Stir thoroughly. 
  • Cover and cook on high for 3.5 hours, stirring once each hour. 
  • With 30 minutes left, stir in 1/4 cup of canned coconut milk. 
  • Once fully cooked, serve topped with cilantro and a squeeze of lime.
