Slow Cooker Paleo Chili Recipe
This delicious and easy to make paleo chili recipe is not only vegan, but it is also Whole 30 compliant & only takes 4 hours in the slow cooker or crockpot
Servings: 6 people
- 114 g sweet potato medium size, peeled & diced
- 1/2 cup red pepper diced
- 1/2 cup green pepper diced
- 1/2 cup carrots diced
- 1/4 cup red onions diced
- 2 cups vegetable stock
- 14.5 oz Canned Diced Tomatoes
- 2 tbsp red curry paste
- 1/4 cup canned coconut milk
- 2 tsp garlic minced
- 1 tsp salt
- 1/2 tsp pepper
Dice peppers, sweet potato, onion, and carrot, and put in the bottom of a slow cooker.
Add in diced tomatoes, curry paste, garlic, pepper, and vegetable stock. Stir thoroughly.
Cover and cook on high for 3.5 hours, stirring once each hour.
With 30 minutes left, stir in 1/4 cup of canned coconut milk.
Once fully cooked, serve topped with cilantro and a squeeze of lime.
