Keto Cream of Mushroom Soup

This yummy Keto Cream of Mushroom soup is a low carb choice that is also dairy free. It is also the base for keto recipes on the Keto diet.

Ingredients

  • 1 Onion
  • 12 Mushrooms
  • 2 Cups Bone Broth
  • 1 Cup Almond Milk Unsweetened
  • 1/4 Cup Almond Flour
  • 1 tsp salt
  • 1 tbsp non-dairy butter

Instructions

  • Dice the onion and slice the mushrooms.
  • Add 1 tbsp  of non-dairy butter. Melt the butter.
  • Saute the onions and mushrooms until they are translucent and the mushrooms are browned about 10 minute on medium.
  • Add 1/4 cup of almond flour and mix in.
  • Then, add 2 cups of bone broth.
  • Add 1 cup of almond milk.
  • Bring the soup to a boil.
  • Lower the soup and keep simmering until it reduces by half.
  • Served with fresh cracked black pepper and if you have fresh thyme on hand, you can use it to garnish.

Notes

You can use xanthan gum to thicken the soup quicker. Also, if you are using the mushroom soup where it needs to be blended, you can use an immersion blender to mix up the mushroom soup. Then use a mesh strainer or cheese cloth to remove any bits of unblended mushrooms.
