This yummy Keto Cream of Mushroom soup is the perfect lunch meal for anyone that is looking for a low carb choice that is also dairy free. It also a base for a lot of low carb recipes that you can eat on the Keto diet. 

My husband and I are both on the Keto diet. He is able to eat dairy, but I am not. I did an elimination diet last year and found out that my body is very reactive to dairy.

Since my husband prefers dairy, I do my best to make low carb recipes that are can work with and without dairy. This homemade cream of mushroom soup recipe can be made both dairy free and with heavy cream and butter. It is pretty much the same soup recipe and I have made it both ways with success.

Is Cream of Mushroom Soup Gluten Free?

Most store bought mushroom soup recipes are not gluten free because they use flour to cream the creaminess that makes it cream soup. That begs the question, is Campbell’s Cream of Mushroom Soup gluten free? No, it is not! 

For this Keto soup recipe, we are using Almond Flour to create the creaminess of the low carb soup. 

How Many Carbs in Cream of Mushroom Soup? 

In the Campbell’s Can of Cream of Mushroom Soup there are 20 carbs per can and 8 net carbs per serving. This is the original condensed cream of mushroom soup. The lowest carb count that I found for Campbell’s Mushroom with 25% Less Sodium is only 8 carbs per serving and 6 net carbs.  In our low carb gluten free cream of mushroom soup recipe, there are 6 carb with 4 net carbs per serving.

What to Make with Cream of Mushroom Soup?

  • You can us this low carb soup as a topping over pork chops, chicken, and steak. It tastes delicious and almost acts like a gravy.
  • It would also work really well over our Cauliflower Mashed Potatoes. Spinach casserole
  • You can also use the creamy Keto mushroom soup as a base for casseroles like Green Bean Casserole, Polish Casserole, and Spinach Casserole. 
  • If you have some lunch meat on hand or left overs, you can use it as a topping for Roast beef Sandwiches and Open Face Roast Beef.

Is Cream of Mushroom soup Keto Friendly?

Canned Mushroom soup is not Keto friendly, but this homemade cream of mushroom soup recipe is Keto friendly. 

Homemade Cream of Mushroom Soup

Non Dairy Mushroom Soup Ingredients 

1 Medium Onion
12 Mushrooms
1 tbsp non-dairy butter 
2 Cups Bone Broth 
1 Cup Unsweetened Almond Milk 
1/4 Cup Almond Flour 
1 tsp salt 

Are Mushrooms Low Carb?

Almost all mushrooms are low carbs. We used Crimini Italian mushrooms because they are low in net carbs. The button mushrooms that you see at most grocery stores are also low carb. But, Shiitake mushrooms are actually pretty high in carbs. Not all mushrooms were created equal.

 

How to Make Cream of Mushroom Soup

Dice the onion and slice the mushrooms.

Slice Mushrooms

Add 1 tbsp  of non-dairy butter. Melt the butter. 

Saute Mushrooms

Saute the onions and mushrooms until they are translucent and the mushrooms are browned about 10 minute on medium.Saute Mushrooms and Onions

Add 1 cup of almond milk. 

Add Almond Milk

Then, add 2 cups of bone broth. 

Add Bone Broth

Add 1/4 cup of almond flour and mix in. 

Almond Flour Cream of Mushroom Soup

Bring the soup to a boil. 

Lower the soup and keep simmering until it reduces by half. 

Served with fresh cracked black pepper and if you have fresh thyme on hand, you can use it to garnish. 

Notes: You can use xanthan gum to thicken the soup quicker.

Also, if you are using the mushroom soup where it needs to be blended, you can use an immersion blender to mix up the mushroom soup. Then use a mesh strainer or cheese cloth to remove any bits of unblended mushrooms.

You can make this a vegan cream of mushroom soup by using vegetable broth rather than bone broth.

2 Cups Bone Broth
1 Cup Heavy Cream
1/4 Cup Almond Flour 
1 tsp salt 

How to Make Low Carb Mushroom Soup with Dairy

Dice the onion and slice the mushrooms.

Add 1 tbsp butter. Melt butter. 

Saute the onions and mushrooms until they are translucent and the mushrooms are browned about 10 minute on medium. 

Add 1/4 cup of almond flour and mix in. 

Then, add 2 cups of chicken broth. 

Add the cream.

Bring the soup to a boil. 

Lower the soup and keep simmering until it reduces by half. 

Add Almond Milk
