Ingredients

  • 2 Pounds Stew Meat
  • 2 tbsp MCT Oil
  • 16 oz Cauliflower
  • 1 Yellow Onion
  • Salt & Pepper
  • 2 cups Celery
  • 28 oz Diced Tomatoes
  • 1 cup Beef Bone Broth

Instructions

  • Start making this perfect keto beef stew by turning the pressure cooker to sear mode.
  • Salt and pepper the stew meat.
  • Add the stew meat and sear it on all sides for about 2 minutes on each side.
  • Slice up the onions and add them to the pressure cooker.
  • Add 1 cup of beef broth To the pressure cooker.
  • Close the lid or with the ninja foodie add the pressure cooker lid on top.
  • Then, said the ninja foodie or pressure cooker ti high pressure for 20 minutes.
  • While the meat and onions cook, cut up the cauliflower, dice the celery, and open the can of diced tomatoes.
  • Once the pressure cooker beeps, let the pressure out with a quick release by venting the steam.
  • Next, add in the cauliflower, 2 tablespoons of MCT oil, diced celery, and diced tomatoes.
  • Add salt and pepper to the veggies.
  • Mix everything together so everything is coated in the broth and tomatoes.
  • Close the lid or with the ninja foodie add the pressure cooker lid on top.
  • Then, the ninja foodie or pressure cooker to high pressure for 20 minutes.
  • Once the pressure cooker beeps, let the pressure out with a quick release by venting the steam.
