As the temperature starts to fall, the first thing that I think to make is this low-carb beef stew. It is heart, delicious, and really easy to make! This is just one of our favorite low carb Keto recipes here on April Golightly. 

Today I made the keto stew in the pressure cooker that I just got called the ninja foodie. I have made it in the instant pot before and also a slow cooker and even in a dutch oven. This keto beef stew recipe is a great choice for meal prepping because you can eat some of it the day you make it and freeze the rest for eating later.

Cooking for the family when you’re sticking to a low-carb or keto diet can be difficult. This keto beef stew is kid approved and keto approved. My daughter loves it and eats the whole bowl for dinner. 

It Comes as no surprise to me that she loves this stew. When I was a kid stew was my one of my favorite dinners that my mom would make. Of course, she made it the traditional way with potatoes and carrots. Now that she’s gluten-free she makes it with sweet potatoes instead.

Low Carb Beef Stew Recipe

Carb Count 

This Keto stew recipe has 8 carbs per serving and 6 net carbs because of the fiber. It is a great choice for dinner if you are on low carb or Keto diet. 

Keto Stew Ingredients 

  • Stew Meat 
  • MCT Oil
  • Cauliflower
  • Yellow Onion 
  • Salt & Pepper
  • Celery
  • Diced Tomatoes
  • Beef Bone Broth 

Beef in the Stew 

You can make the low carb stew with some already sliced you meet or a pot roast or some other inexpensive beef cut that works well in a slow cooker. 

MCT Oil

MCT stands for medium chain triglycerides, which are chains of fatty acids. MCT’s are found naturally in coconut oil, palm oil, and dairy. they are particularly helpful on a keto diet because the body uses them quickly. Any MCT’s not immediately utilize are converted to ketones.

MCT oil is extracted from coconut or palm oil and contains higher concentrated levels of MCT’s so it’s great for adding ketones to your diet.

You can swap out MCT oil in this recipe and instead use coconut oil or avocado oil or even olive oil. Those are all great choices on the keto diet. However, coconut oil and olive oil will add those flavors to this low-carb stew recipe.

Cauliflower

One of the best keto vegetables out there is cauliflower because it’s keto friendly and doesn’t overpower you with flavor. It is extremely low card with only 5 carbs per cup and 3 g of fiber making one cup of cauliflower only two net carbs.

Eating cauliflower regularly is a simple way to get these much-needed nutrients into your body whether you are on Keto or not.

One serving of cauliflower contains 77 percent of the recommended daily value of vitamin C. It’s also a good source of magnesium, and fiber.

More Ingredients to Add 

When I make this stew at home, I sometimes add mushrooms or kale as part of the stew. These veggies are both Keto friendly vegetables that will not add a ton of carbohydrates to the soup. Also, if you like the flavor of red wine or Worcestershire sauce, a tablespoon of each will add some more flavor. 

How do you thicken keto stew?

If you are doing low carb, you really want to skip the typical thickeners. If you want to thicken my stew without flour or cornstarch, you can add xanthan gum to the recipe to thicken up the soupy part of the keto stew.

Xanthan gum and almond flour roux are both low carb thickeners that don’t add a ton of carbs. However, in this recipe, I skipped the Keto stew thickener and just kept the liquid to a minimum. The veggies soak up a ton of liquid and you can just let the liquid drain when you ladle the strew into the serving bowls.

How to Make Keto Beef Stew? 

Start making this perfect keto beef stew by turning the pressure cooker to sear mode. 

Salt and pepper the stew meat. 

Add the stew meat and sear it on all sides for about 2 minutes on each side.

Slice up the onions and add them to the pressure cooker. 

Add 1 cup of  broth to the pressure cooker.

Add Bone Broth to the pressure cooker

Close the lid or with the ninja foodie add the pressure cooker lid on top.

Then, said the ninja foodie or pressure cooker to high pressure for 20 minutes.

While the meat and onions cook, cut up the cauliflower, dice the celery, and open the can of diced tomatoes. 

Once the pressure cooker beeps, let the pressure out with a quick release by venting the steam. 

Next, add in the cauliflower, 2 tablespoons of MCT oil, diced celery, and diced tomatoes.

Add salt and pepper to the veggies.

Mix everything together so everything is coated in the broth and tomatoes. 

Close the lid or with the ninja foodie add the pressure cooker lid on top.

Then, the ninja foodie or pressure cooker to high pressure for 20 minutes.

Once the pressure cooker beeps, let the pressure out with a quick release by venting the steam.
