- 1 Cup lettuce chopped
- 1 Cup red cabbage chopped
- 1 Chicken breast
- ½ Cup carrot shredded
- ½ Green apple sliced
- 1 Tsp olive oil
- Salt and pepper to taste
- 1 Tbsp soy sauce
Dressing
- 4 Tbsp greek yogurt or mayonnaise
- 1 Tbsp rice vinegar
- 1 Tsp sugar
- ½ Tsp soy sauce
- ½ Tsp garlic powder
Season the chicken breast with salt, pepper and soy sauce.
In a skillet over medium-high heat, cook the chicken breast until golden brown.
Remove from the skillet and let it sit for 5 minutes before slicing it. Slic it thinly.
For the dressing, in a small bowl mix all the ingredients until well combined. Set aside.
Fill a bowl with a lettuce-red cabbage mix, and top it off with the green apple, carrot, and chicken breast.
Drizzle the dressing on top.
Serve and enjoy.
