After all the overeating that comes with the holiday season, this Asian Chicken Salad is the perfect light dinner or lunch.

We are finally at that time of the year, the moment where we get to eat a lot, drink a lot and laugh a lot. I mean it’s like a dream come true right? Except that after all the leftovers are shared, all the dishes are cleaned and everyone has left home for the day the guilt kicks in. I mean you are over full (let’s be honest, we all overeat!), and the thought of eating that much again seems like a nightmare.

And that’s my friend when we start craving all the salads and light dishes. So this classic Asian Chicken Salad has become my go-to meal of choice every non-holiday day of the holiday season. This is healthy but it’s so flavorful that it doesn’t taste any healthy at all. It’s also jam-packed with flavor and the dressing oh my gosh the dressing is A MA ZING. As in so amazing you should really make a big batch and have it with everything.

Another great thing is that you don’t really need a ton of ingredients to make this salad so that’s great if you don’ feel like heading to the supermarket. And best of all, the dressing goes really well with almost everything (told you that this was pretty amazing) so you can feel free to substitute some of the veggies for others you have on hand or even adding some of the leftovers from the parties.

Trust me when I say this classic Asian chicken salad is so delicious it’s going to become a staple in your home and it’s going to be a total crowd favorite. Hey, you can even make a tradition out of eating this salad the next day after the holiday.

Asian Chicken Salad Recipe

A classic Asian salad starts with vegetables like carrots, cabbage, and lettuce. Other vegetables or even fruits can be added to create variety. The ingredients are usually shredded or chopped into matchstick size pieces.

Ingredients Needed for This Asian Chicken Salad

Ingredients

1 Cup lettuce, chopped
1 Cup red cabbage, chopped
1 Chicken breast
½ Cup carrot, shredded
½ Green apple, sliced
1 Tsp olive oil
Salt and pepper to taste
1 Tbsp soy sauce

For the dressing

4 Tbsp greek yogurt or mayonnaise
1 Tbsp white rice vinegar
1 Tsp sugar
½ Tsp soy sauce
½ Tsp garlic powder

Asian Chicken Salad Instructions

Directions

Season the chicken breast with salt, pepper and soy sauce.
In a skillet over medium-high heat, cook the chicken breast until golden brown.
Remove from the skillet and let it sit for 5 minutes before slicing it. Slice it thinly.
For the dressing, in a small bowl mix all the ingredients until well combined. Set aside.
Fill a bowl with a lettuce-red cabbage mix, and top it off with the green apple, carrot, and chicken breast.
Drizzle the dressing on top.
Serve and enjoy.

Tips

You can also add some peanuts for an extra crunchiness.
