Ingredients

  • 2 Cans Tuna in Olive Oil
  • 2 Eggs Large
  • 1/2 Cup Bread Crumb
  • 1/2 Cup Sweet Potato Shredded
  • 1 tbsp Chives diced
  • 1 tbsp parsley dried
  • 1/4 tsp pepper
  • 1 Tomato sliced for topping

Instructions

  • Beat the 2 eggs lightly in a large mixing bowl.
  • Heat up the broiler to 500 degrees and move the top rack to the closest possible.
  • Add 1/2 Cup Bread Crumb, 1/2 Cup Shredded Sweet Potato, 1 tbsp diced Chives, 1 tbsp dried parsley, 1/4 tsp pepper into the mixing bowl.
  • Strain and shred tuna with a fork.
  • Add tuna to mixing bowl with other ingredients to combine.
  • Make about 6 tuna patties about 3/4 inch thick.
  • On a cookie sheet, lay out a piece of foil and place the tuna patties about 2 inches apart.
  • Put the cookie sheet in the oven for 4 minutes.
  • Take out the tuna patties and flip.
  • Cook the tuna patties for another 4 minutes.
  • Serve the patties with tomato slices or fresh salsa on top.
