I have been on the hunt for easy recipes like these Tuna Patties that I can make quickly so that I can have dinner on the table every night for my family. We have also been focusing on eating more fish in an effort to be more healthy and also keep our cholesterol down.

This tuna patties recipe starts with extremely healthy canned tuna. The one that I picked this time is Poll & Troll caught. It is called Wild Planet Albacore Tuna. It says that it is rich in Omega 3 oils and is lower in mercury as compared to conventional tuna due to the smaller fish we catch. I am all for avoiding the mercury because I could literally eat tuna for every meal especially sushi.

My husband is not big on the sushi or fish in general so I have to sneak it into his diet in creative ways. He loved these Tuna Patties and even went back for seconds! That’s when I know I did a good job!!

Tuna Patties with Shredded Sweet Potato Recipe

Ingredients 

2 Cans Tuna in Olive Oil
2 Large Eggs
1/2 Cup Bread Crumb
1/2 Cup Shredded Sweet Potato
1 tbsp Chives, diced
1 tbsp dried parsley
1/4 tsp pepper
1 Medium Tomato, sliced for topping

Large Mixing Bowl
Cookie Sheet
Measuring Cups 
Measuring Spoons

Instructions 
Beat the 2 eggs lightly in a large mixing bowl.

Heat up the broiler to 500 degrees and move the top rack to the closest possible.

Shred the sweet potato.

Add 1/2 Cup Bread Crumb, 1/2 Cup Shredded Sweet Potato, 1 tbsp diced Chives, 1 tbsp dried parsley, 1/4 tsp pepper into the mixing bowl.

Strain and shred tuna with a fork.

Add tuna to mixing bowl with other ingredients to combine.
Make about 6 tuna patties about 3/4 inch thick.

On a cookie sheet, lay out a piece of foil and place the tuna patties about 2 inches apart.
Put the cookie sheet in the oven for 4 minutes.
Take out the tuna patties and flip.
Cook the tuna patties for another 4 minutes.
Serve the patties with tomato slices or fresh salsa on top.
