Ingredients

  • 2 Tbsp Avocado Oil or Olive Oil
  • 1 Tbsp Red Wine Vinegar
  • 1/4 Tsp Black Pepper
  • 1 Tsp Salt
  • 1/2 cup red onions diced
  • 2 Tbsp roasted red pepper diced
  • 1 Jalapeno cored and diced
  • 5 Tomatoes medium, wedged
  • 3 Cucumbers small, diced

Instructions

  • Cut up all the veggies and spices.
  • Mix all ingredients into a large bowl.
  • Cover and let sit in the refrigerator for at least an hour.
  • Serve within 3 days.
