He’s the best for going to the grocery store for me while I lay under a pile of work and dishes. LOL I am excited to share this yummy fresh tomato cucumber salad with you today. You will love it as much as I do. P.S. I ate this whole bowl over the course of two days. It is pretty healthy so I felt no guilt!

Fresh Tomato Cucumber Salad Recipe
- 2 Tbsp Avocado Oil or Olive Oil (I have been using avocado oil lately, but both work – see more info below)
- 1 Tbsp Red Wine Vinegar
- 1/4 Tsp Black Pepper
- 1 Tsp Salt
- 1/2 cup red onions, diced
- 2 Tbsp roasted red pepper, diced
- 1 Jalapeno, cored and diced
- 5 Medium Tomatoes, wedged
- 3 Small Cucumbers, diced

We are always hearing that avocado oil has healthy fat. That healthy fat is heart-healthy oleic acid, a monounsaturated omega-9 fatty acid. This fatty acid is the same as in olive oil.
How to Cut Tomatoes for a Salad?
Start by cleaning the tomatoes.
Use a knife that is sharp and serrated.
Cut Tomato in half cutting through the core.
Use the serrated knife to cut out the core using a V.
Place the tomato cut side up and slice lengthwise into wedges.
How to Make a Cucumber Tomato Salad?
- Cut up all the veggies and spices.
- Mix all ingredients into a large bowl.
- Cover and let sit in the refrigerator for at least an hour.
- Serve within 3 days.
