Mango Cucumber Salad

This Mango Cucumber Salad is refreshing spring and summer side salad. It is a perfect to BBQ gatherings with hamburgers and hot dogs on the grill.

Ingredients

  • 3 cups cucumbers
  • 1 cup grape tomatoes
  • 1 tbsp chopped cilantro
  • 1 tbsp avocado oil
  • 1 tsp white wine vinegar
  • salt and pepper
  • 1 cup mango

Instructions

  • Firstly, wash all the fruits and vegetables before cutting them.
  • Then, remove the skin from the mango and dice it up to remove the pit.
  • Slice the cucumber, carrots, and tomato into rounds.
  • Next, add all the vegetables to a mixing bowl.
  • Then, add the oil and coat the veggies first.
  • Next, add the vinegar, as well as, the salt and pepper.
  • Finally, add cilantro leaves to the salad.
  • Serve cold.
