Preheat oven to 350 degrees F. In a bowl, combine olive oil and boccincini. Mix in the Italian seasoning. Let sit for 10 minutes.
Meanwhile, spread the pesto on the base of the tortilla. Sprinkle half of the shredded/grated parmesan on top of the pesto.
Lay down the slices of ham, green pepper and boccincini.
Sprinkle the remaining half of the parmesan cheese.
Bake in the oven for approximately 12 – 15 minutes, or until nicely browned.
