My mom and I are both obsessed with Bocconcini Mozzarella. They are extremely easy to eat and are just so creamy. Add a tiny bit of salt and I will consume an entire container of of the cheese. I decide to get a little crazy and put the Bocconcini on a Tortilla Pizza. The combination of the peppers, ham, pesto and cheese makes this pizza a party favorite appetizer.
Ham & Pesto Bocconcini Tortilla Pizza
1 Flour Tortilla (corn to cut calories)
1 Tbsp. Pesto
8 – 10 Cocktail (Small) Boccincini
1 Tbsp. Italian Seasoning
3-4 ounces Cooked Ham, sliced
½ Sweet Pepper, chopped
½ C Parmesan, shredded/grated
2 Tbsp. Olive Oil
1. Preheat oven to 350
2. In a bowl, combine olive oil and boccincini. Mix in the Italian seasoning. Let sit for 10 minutes.
