Waldorf Salad Recipe with Cottage Cheese

Ingredients

  • 1 Cup Grapes sliced in half
  • 2 Chicken Breasts grilled or baked diced into bits 1 tsp chives
  • 16 oz Cottage Cheese
  • ¾ Cup Golden Raisins
  • 1 Cup Walnuts shelled and chopped
  • 1 Cup Celery diced
  • 2 cups Apples
  • Salt & Pepper to taste

Instructions

  • Wash and chop all the fruits & veggies.
  • Cut the fat off the chicken breasts.
  • Salt and pepper both sides of the chicken.
  • Bake chicken at 350 degrees F for 12 minutes. 
  • Cut the grapes in half, diced the celery, cut the apple into ¼ inch bits, and shell and chop the walnuts.
  • Once the chicken is cooked fully, chop it up into ¼ inch pieces.
  • You don’t want huge pieces. Mix the chicken, cottage cheese, celery, grapes, walnuts, apple and raisins in a large bowl.
  • Season with salt and pepper to taste. Garnish with chives.
