I have been wanting to try my hand at making a caramel cake for a while now, but the topping, the caramel topping, always scared me so much that I just jumped on to another recipe, until last week when I found myself with ingredients and enough time on my hands to experiment in the kitchen.
After a couple of trial and errors, I came up with a recipe so good and so easy that you should be making it ASAP. Best thing, this is pretty fool proof and oh my gosh so good every single person that tries it will ask for the recipe.
The cake is moist but sturdy and it’s not overly sweet making it the perfect base, then it’s topped with some caramel and it’s so good I still can’t believe it was so easy to make.
Seriously, there’ no need to make caramel from scratch and wait for the 2+ hours of stove time it takes (no one has time for that during Summer) you can actually make the caramel using, well caramels and melting them in your microwave. Easy peasy and the single most delicious caramel I’ve ever had, especially taking into consideration it only took 5 minutes to make.
While I like to keep it with cake and caramel and that’s it you can also top it with some sea salt for a salted caramel cake, just sprinkle some sea salt flakes o top of your caramel coat and that’s it.
The only difficult part is to manipulate the caramel while it’s still hot. Caramel can get all fussy while you are decorating your cake but if you keep your spatula warm while decorating the cake things would go smoothly and you will end up with a beautiful and delicious cake, no one needs to know it was super easy.
Caramel Cake
Ingredients
¼ Cup butter
½ Cup sugar
1 Egg
¾ Cup flour
¼ Cup milk
1 Tsp baking powder
1 Tsp vanilla extract
For the Topping
2 Cups melted caramel
Optional: sea salt to taste
Directions
Preheat the oven to 350 degrees F.
Place in a bowl the butter and sugar and mix until well incorporated.
Add the egg, flour, milk, baking powder and vanilla extract, and mix for 3-5 minutes until the batter is smooth.
Pour the mix into a greased a cake pan.
Take to the oven and bake for 35 minutes or until done.
Take the cake out of the oven, and wait 5-10 minutes before removing it from the cake pan.
Let it cool down for 15 minutes.
Top it with the caramel.
Serve and enjoy.
