I’m obsessed with this Classic Tuscan Tomato Soup! Comforting, filling and an incredibly easy to make family favorite.
I’m going to be honest with you, more often than not I find myself craving Italian dishes, there’s something about the comfort of a traditional Italian dish that makes it really appealing and really comforting, especially in the middle of winter.
This bowl of classic Tuscan tomato soup has become a family favorite for those exact reasons. It’s comforting and it’s so warm it feels almost like a really tight hug. But best of all (and that’s what keeps me making it again and again) it’s not complicated at all, which honestly it’s almost too good to be true.
The base of this tomato soup is made with carrots and onions and real plum tomatoes. Add a little bit of olive oil and some garlic cloves and you literally have a recipe for perfection. Oh and don’t forget about the basil leaves, they definitely add the Tuscan kick we need in there.
But the net best thing about this recipe has nothing to do with the fact that it tastes amazing and it’s easy to make. It’s the smell. I could literally write a whole post about how amazing this tomato soup smells and how good your home will smell while cooking this on your stovetop. Oh my gosh, it’s like a visit to the Italian countryside meets the most delicious blend of spices. If they could bottle up that scent I would literally purchase it for my kitchen that’s how good it is.
So please make yourself a big pot of this and enjoy it as a comforting dinner with a piece of crusty bread and a generous sprinkle of parmesan cheese.
Tuscan Tomato Soup Shopping List
Before you make this amazing homemade soup, here is what you’ll need from the store:
- Onion
- 6 Tomatoes
- 2 Carrots
- 2 Cups vegetable broth
- 3 Garlic cloves
- olive oil
- Salt and pepper to taste
- paprika
- minced basil leaves
- Basil leaves for garnish
How to Make Tuscan Tomato Soup
In cutting board mince the garlic cloves and finely dice the onion, tomatoes, and carrots.
In a pot over medium heat pour the olive oil and heat for 1 minute.
Incorporate the onion, carrot, paprika, salt, and pepper. Stir and cook for 10 minutes or until tender.
Add the tomatoes and garlic cloves, stir and cook for 3 minutes.
Add the vegetable broth and minced basil leaves and cook for another 30 minutes.
Pour into bowls, top with more pepper, some parmesan cheese, and a basil leave.
Serve and enjoy.
