The big game is this weekend, and I know you are trying to find awesome recipe options with a cool presentation to impress your friends. Everyone in my household has been obsessed with coconut chicken nuggets lately. I have been tweaking this recipe for a while now, and I finally found the perfect dressing to go with it! Naturally Fresh® is a line of high-quality, homemade-tasting salad dressings and dips with no artificial flavors, colors or preservatives. I found the Naturally Fresh® Lite Ranch Dressing at Publix in the cold dressing isle. You can use the free Naturally Fresh® mobile app to locate Naturally Fresh® products at your nearest store.
Many foods on store shelves, today contain artificial flavors and colors that change the way the food tastes and looks, as well as preservatives that extend their shelf life. Naturally Fresh® refrigerated dressings are different. The company creates products that taste great by using wholesome ingredients and leaving out artificial preservatives and artificial colors or flavors.
Naturally Fresh® does not use:
- Artificial thickeners to make up texture that should come from real ingredients.
- Monosodium glutamate (MSG), an artificial flavor enhancer.
- Artificial preservatives. That’s why you’ll only find Naturally Fresh® products in the refrigerated section.
- Artificial colors or flavors.
Ingredients
4 Chicken Breasts or Cutlets (if you are serving in small cups like I did), boneless/skinless
1/2 unsweetened coconut flakes
1/4 cup Arrowroot Starch
1 Tsp Kosher Salt
1 Tsp Ground Cinnamon
1 Tsp Chili Powder
Coconut Oil, for cooking purposes
Naturally Fresh® Lite Ranch for dipping
Tools and Supplies

Instructions
Place the coconut, arrowroot starch, salt, cinnamon, and chile powder into a blender. Place contents from blender/food processor into a large zip lock bag. Set aside.
Using a knife or kitchen shears, trim fat off the chicken and cut into bite-sized pieces.
Put the chicken pieces in the plastic bag, seal, and shake until chicken is completely covered. Set aside.
Heat a large skillet over medium-high heat with about 1/4 inch of coconut oil to line the skillet.
Place chicken in the hot skillet adding just enough, so the pieces don’t touch. Cook for about 2 minutes. Cooking may take longer depending on how big you cut the chicken and if you are using cutlets or breasts.
Using a wooden spatula or 2 wooden spoons, gently flip the chicken over and continue cooking until they are cooked all the way.
Remove the chicken and drain on a paper towel-lined plate. Repeat until all chicken is cooked.
Serve with Naturally Fresh® Lite Ranch for dipping for an awesome Big Game appetizer.
