These Buffalo Chicken Tacos are my husband’s favorite easy dinner item. He is always asking me to make them, and I finally broke down and took pictures of the process to share with you. I know that I have stuck food “gold” when my hubby is on me to remake a recipe.
My goal this year is to make recipes that my family loves and are also healthy for them. This way they want to eat and spend time around the table eating and talking about their day. I just love hearing all about my toddler’s day. She is talking up a storm and has developed a great personality. The other day one of our friends went on and about how friendly and personable she is. As a mom, you are always doing what you think is best and hoping that your kid will be a smart, well-rounded child. I believe she is intelligent and well-rounded, but when it comes from a friend, you feel pride beaming from your heart (and tears from my eyes now that I am thinking about it again). As parents, we don’t give out enough of these compliments. Parents need to step up and compliment a mommy job well done. It can a make a parent’s day or even a month! Share the love this year!
Easy Buffalo Chicken Tacos Recipe
Buffalo sauce
2 tbsp Frank’s Wing Sauce
1 tbs honey
1 tsp chili powder
1/2 tsp paprika
1 tsp taco sauce
- Chop/cut chicken, toss in sauce, then cook over medium/high heat for 7-10 minutes until fully cooked.
- Set aside in a bowl until ready to serve.
Cilantro dressing
1 cup sour cream
Small handful cilantro – chopped
1 tsp Frank’s wing sauce
1 tbsp ranch mix (from packet)
- Combine all ingredients in blender and pulse until evenly blended.
- Chill for at least 15 minutes in the fridge before serving.
Toppings
1/2 cup matchstick carrots
1/2 can whole kernel corn
1/3 cup chopped cilantro
Crumbled blue cheese
Corn tortillas
Optional toppings: Tomato, avocado, onions, jalapeno

- Brown tortillas in oven for a few minutes, then build tacos by layering chicken, veggies, blue cheese, then cilantro dressing. Serve warm!
