Holiday cocktail parties are the most popular way to entertain. This is because a great holiday cocktail party creates traditions, lasting friendships, and is just a fun way to get together. It is the sparkling candles, holiday music, and festive decor add to the ambiance of a fabulous party. Here are my party food tips and menu for hosting a delicious holiday party with a Mexican flair.
Holiday Party Menu:
Cream Cheese & Green Tabasco Quesadilla (recipe below)
Vegetarian Ceviche Dip (on April Golightly)
Guacamole
Shrimp Cocktail
Sweet Potato Skins
Pico de Gallo
I chose common ingredients for all the dishes so that you don’t have to go crazy buying all different things. I start with the idea to go with all Mexican dishes because I am addicted to Tabasco Green Jalapeño sauce. I picked up my bottle at Walmart last week and started using it inside all of my dishes instead of just using it as a sauce on top.
Cream Cheese & Green Tabasco Quesadilla Recipe
Ingredients
2 Chicken Breasts or 4 Cutlets (cutlets cook better)
Flour Large Tortillas
Tabasco Green Jalapeño sauce
Poultry Seasoning
Spray Olive Oil
Onions
Cream Cheese
Shredded Cheese
Garnish
Green Onions
Ranch Dressing
Pico de Gallo
Instructions
Cook chicken on a griddle spraying both side with spray olive oil and season with poultry seasoning. Cut the chicken into small strips.
Cut up onions julian style if they are small pearl sized onions or chop them up if it is a larger onion. You want about 1/3 cup of onion uncooked.
Sauté onions with a tablespoon of Tabasco Green Jalapeño sauce.
Spray each side of the tortilla with olive oil. Allow the first side to turn slightly brown over medium heat.
Flip over the tortilla. Start building the quesadilla by laying cream cheese on the bottom of the tortilla. Then, arrange the chicken so that it will go along the wedges of the quesadilla when you cut them. Top with grated cheese. Close the tortilla and allow bottom to get golden brown before you flip the quesadilla.
Serve with Pico de Gallo, green onions, ranch dressing and Tabasco Green Jalapeño sauce.
