Back to school is almost here! I am trying to plan out all the recipes that I will be making starting this school year so that it makes shopping and back to school life a little easier. My daughter loves peaches and I constantly chop them up to bring them along on play dates.
This is the perfect treat that is both healthy and sweet for both you and your kids. If you want to send to school with your kids, you can just skip the whipped cream or put a side of ready whip that is not as delicate as homemade whipped cream.
Peach Coconut Dessert
Ingredients
- 2 Peaches
- 1 Can Coconut Milk (chilled overnight in the refrigerator)
- 2 tbsp Brown Sugar
- 1/4 cup Powdered Sugar
- 2 tbsp Sliced Almonds
How to Make Fresh Peach Desserts?
Wash and slice peaches into quarters. Further slice each quarter in half again, and then chop into marble sized pieces.
Sprinkle the brown sugar onto the peaches and mix thoroughly. Set aside.
Open the chilled can of coconut cream and carefully remove the hardened coconut cream at the top of the can. Place that into your mixing bowl.
Add powdered sugar and begin to whip the cream and sugar together. When thoroughly combined, chill in the refrigerator until ready to use.
Place peach pieces into two bowls. Drizzle the juice at the bottom of the bowl over the peaches.
Taking your whipped coconut cream, place a nice sized dollop onto the peaches, and garnish with the sliced almonds. Serve immediately.
