Summer is almost upon us, and it’s time to start having planning some parties during those long summer nights. We invested in a projector and some awesome speakers and floats so that we can watch movies from the pool with our friends and family this summcer.
I have put together a party plan for 8 to 10 people including decor and recipes for all the menu items. I want to make it extremely easy for you!
Summer Grilling Party Decor
My party decor was based off a table cloth that I found here. I matched the balloons, paper plates, napkins, and cool straws to the color scheme.
For there, I wrote a list of items where I knew I would use most of the ingredients in several dishes. I hate to waste anything!
I started the party with a cheese platter with crackers, a fruit platter with leftover fruit from making the refreshing spicy sangria, and bacon wrapped scallops.
The main meal consisted of grilled corn lollipops with a few choices of white wine butter sauces. You can also use the white wine butter sauce on top of the bacon wrapped scallops. Then, the main dish were extremely juicy beef ribs.
Here is the shopping list for 8 to 10 guests. I found all ingredients at my local Publix. Including the El Yucateco sauces.
The Red Habanero Hot Sauce is made with fresh red habanero peppers, tomato, and select spices and seasonings.
The El Yucateco Green Habanero Hot Sauce is made with fresh green habanero peppers, garlic, select spices and seasonings. It packs a little more heat then our red habanero, but similarly has far less vinegar than the average hot sauce. For grilling or cooking this sauce pairs best with lighter foods, chicken, fish, and veggies. You can also blend it with ranch dressing for an amazing alternative dressing or dip.
The XXX Habanero Hot Sauce (Kutbilik) is a rescued recipe from the Mayan vault. It is 90% of fruit! This sauce is made from the ripest habaneros giving it a slightly rustic and earthy flavor. Although, this is their hottest sauce measuring approx. 12,000 on the Scoville scale, it is not so extreme that it can’t be used as an everyday sauce either.

Baked Beef Ribs with Honey Hot Sauce Rub
Ingredients
1 cup olive oil
2 tsp honey
2 tbsp hot El Yucateco XXX Habanero Hot Sauce
16 beef ribs
Instructions
1. Mix all ingredients into a mixing bowl with a fork.
2. Pour mix over the beef ribs.
3. Rub the mix into the ribs.
4. Preheat oven at 350 degrees F.
5. Bake the ribs in a thick pan for 20 minutes.
Corn Lollipops with Spicy Butter Sauce Bar
I made three types of these sauce so that my guests would have options for flavor and spiciness. I labeled the spoons with gift tags, so people knew what they were getting themselves into before they started buttering their corn with XXX Spicy Butter Sauce. To make it easier to try the dips, I cut the grilled corn into 1 1/2 inch pieces. Then, I stabbed them with short skewers to make corn lollipops.
Ingredients
1/2 cup white wine
1/4 cup whole milk
2 tbsp butter, chilled
1/2 tsp El Yucateco XXX Habanero Hot Sauce & El Yucateco Green Hot Sauce
Salt and white pepper to taste
Instructions
1. Grill the corn for 15 minutes flipping every 5 minutes.
2. In a small saucepan, cook white wine on medium and let it cook for about 4 minutes until reduced by approximately 1/3.
3. Remove the pan of wine from the heat and add the butter, stir to combine, and then add the milk. Return the pan to the heat and stir until it begins to bubble.
4. Remove from heat and the hot sauce. Stir, taste the sauce and add salt and pepper to taste. If the sauce is not spicy enough, add more sauce 1/2 tsp at a time.
Bacon Wrapped Scallops Recipe
Ingredients
1 pound large scallops
1 large package bacon
Small skewers
Instructions
1. Wrap bacon pieces around the outside of the scallops, then push the wooden skewer through the middle.
2. Cook under the broiler for 15 minutes, or until bacon is sizzling and brown.
You can also grill these skewers, but I found it easier to cook in the over before the party.
Refreshing Spicy Sangria Recipe
Instructions
1/2 pineapple diced
2 cups watermelon diced
1 bottle Moscato
1 cup orange juice
2 tbsp El Yucateco XXX Habanero Hot Sauce
Ice
Instructions
1. Dice the fruit.
2. Mix ingredients in a clear pitcher.
