This summer is right around the corner and all I want to eat is fresh watermelon salsa. Last year, I made this amazing watermelon salad that people are still talking about and requesting at parties. This time I decided to go a little bit spicy and even more colorful!
I have several herbs and peppers growing in my backyard so I took at my gardening sheers and went to town trying out different herbs for this watermelon salsa. The best comb that I have found for watermelon salsa is spearmint and cilantro. Then, I decided to go with a more mild and flavorful peppers than the traditional jalapeno that is in most salsa – the red bell pepper, yellow bell pepper, and the poblano pepper. If you want a spicy salsa, leave the seeds in the poblano or use a jalapeno with the seeds. It is so here in Florida that added spice is unnecessary.

Watermelon Salsa with Cucumbers and Peppers
Ingredients
- 4 Cups Watermelon diced
- 1 Cup Red bell peppers diced
- 1 Cup Yellow bell peppers diced
- 1/2 Poblano peppers diced
- 1 tbsp Fresh Mint minced
- 1 tbsp Fresh Cilantro minced
- 1 Cup Cucumbers diced
- 1/2 Cup Scallions diced
- 1/2 tbsp Salt
- 1 tbsp Sugar
- 2 1/2 tbsp Lime juice
- 1 tbsp Olive oil
Instructions
- Place all ingredient in a large bowl and toss.
- Served chilled or at room temperature with chips or as a salad.
- Let sit in the fridge for at least an hour before serving.
