Do you ever crave pasta? Becuase I just seriously can’t stop my Italian food cravings! So instead of fighting them I decided to embrace them in a healthy and even more delicious way. These Zoodles Spaghetti with Meat Sauce have been on repeat around here for the last couple of dinners, and I honestly couldn’t be any happier.

zoodles-spaghetti-with-meat-sauce-3-2 zoodles-spaghetti-with-meat-sauce-2-3 If you haven’t heard about zoodles before, they are basically pasta made with a zucchini they are also called zucchini noodles (that’s where the name zoodles come from). They are super easy to make since you just need a spiralizer that you can find in almost any store + the spiralizer can be really really affordable so it’s totally not a fancy kitchen tool that’s going to cost you the same as your rent.

Zoodles are incredibly versatile, and you can have them with almost any sauce or topping just like a traditional pasta. But my all time favorite is topped with a good bolognese sauce. And this bolognese it’s so flavorful and so delicious that you’ll want to have it for every meal.

And want to know what? You can actually have it for every meal because I mean it’s delicious over zoodles but’s also really good on top of quinoa or even rice. Who says bolognese only goes well with pasta?

And while it’s incredibly easy and incredibly quick to make, for me the reason why it’s so flavorful is that we marinate the meat for a while. You can skip the step if you are short on time, but if you have a bit more of time in your hands then marinate it! The beef soaks a lot of the tomato + spices, so the bolognese ends up super hearty and with deep and bright flavors that are mind blowing good.

Zoodles Spaghetti with Meat Sauce

Ingredients

3 Zucchinis

½ Pound ground beef (around 1 cup)

1 Tbsps chopped parsley leaves

2 Garlic cloves, minced

1 Tsp onion powder

½ Cup tomato puree

1 Tbsp oregano

1 Tsp dried thyme

Salt and pepper to taste

Parmesan cheese, to taste

Directions

In a bowl use the hands to combine the beef with tomato puree, garlic, onion powder, thyme, salt, and pepper. Cover and place in the fridge for 2 hours.

Spiralize the zucchinis and take them to a large skillet over medium-high heat.

Drizzle olive oil and cook for 3 minutes. Set aside.

In the same skillet, drizzle a bit more of olive oil and place the beef. Cook for 10 minutes or until desired doneness. Stir constantly.

Serve the zoodles in plates and top with the bolognese and parmesan.

  1. I own a spiralizer and have never tried zoodles. I pinned your recipe, it looks like a good alternative to regular spaghetti.
