Lately, I have been trying to start my day with a high protein breakfast. Usually, I drink coffee, and I am not hungry until around 11 or even later if I am focused. This makes me ravenous in the afternoon and ends up leading to bad lunch and snacking choices. That is why I am making a concentrated effort to eat breakfast even if I am not hungry. This morning I made this high protein breakfast in only 15 minutes while I made and drank my coffee. It was the model of efficiency!
I started with my egg boiling contraption that allows me to hard boil eggs in the microwave in 7 minutes. It is epic! I added the water in the bottom and put the eggs in, and the set the microwave for 7 minutes. That gave me time to make my coffee.
When I took the eggs out of the microwave, I put them in an ice bath while I heated up my Johnsonville Breakfast Sausage for 30 seconds. The Fully Cooked Breakfast Sausages are ready so quickly! They are a great addition to any quick high protein breakfast. They have all the big, bold flavors that Johnsonville is known for without any real cook time.
I peeled the eggs once they cooled and used an egg slicer to cut them up.
Then, I mixed 1 tbsp of light mayo and 1/4 tsp of sriracha into the egg salad.
I severed the egg salad in a gatsby era champagne glass because you eat with your eyes first and I am more likely to dive in if the food looks appealing.
Keto Egg Salad
Ingredients
- 4 Eggs Hard Boiled
- 1 Tbsp Mayo Avocado
- 1/4 Tsp Hot Sauce
- Salt & Cracked Pepper to taste
Instructions
- Hard boil eggs.
- Mix in light mayo and Hot Sauce
- Add Salt & Cracked Pepper to taste
