Whoa! It’s officially school time and I’m just blown away by how fast this summer and my daughter’s first 4 years have gone. She’s officially starting Pre-K and I’m just officially floored! We have been preparing for the big first day with buying lunch stuff and seeing what packs well in a lunch box and also is something my daughter likes. Her fave things at the moment are applesauce, pizza, and ice cream. Luckily her school doesn’t allow ice cream so I skip that one!
We were getting so excited that we made this first day of school sign. She held it for a while and then she insisted we put in on the front door where the wreath goes. Too cute!
In my daughter’s lunch box, I pack my daughter Mott’s® New 100% Juice Pouches and Mott’s Applesauce Pouches for on the go moments in the car and snacks on the way to school. For lunch, she’ll have the veggie pizza, Mott’s applesauce cups, and Mott’s New Juice Pouch. Here are some more back school recipes that you can make for your kid’s lunch box:
This veggie pizza recipe is so GOOD. My daughter is normally anti-broccoli, but since it is yummy pizza, she gave it a try and fell in love. It tastes like you dip carrots and broccoli in ranch dip! I made it for lunch last week to pack in my daughter’s lunch box. I kept some of it for myself for lunch.
Tools You Need:
- Sharp Knife: I use my sharp knife to cut the veggies.
- Cookie Sheet Pan
- Pizza Scissors
Veggie Pizza Recipe
Ingredients
- 1 Package of Pizza Dough
- 1/4 Cup Sour cream
- 1/4 White cheddar, shredded
- 1/4 Cup Mayo
- 1 tsp Lemon juice
- 1 Green onion, green part only
- 1/4 cup Parmesan cheese
- 1 tsp Distilled vinegar
- 1/2 tsp Kosher salt
- 1 tsp Water
- 1 tsp Garlic purée
- 1/2 tsp Black pepper
- 1/4 Cup cream cheese
- 1 tsp blue agave
- 1 Cup Broccoli, chopped
- 1 Cup Carrots, shredded
- 1 Cup Tomatoes, slice
How to Make this Veggie Pizza with Cream Cheese?
Preheat oven to 400*F.
Chop up the broccoli, shred the carrots, and dice the tomatoes.
Mix together all these ingredients in a mixing bowl: 1/4 Cup sour cream, 1/4 white cheddar, shredded, 1/4 cup mayonnaise, one teaspoon lemon juice, one green onion dice up the green part only, 1/4 cup parmesan cheese, 1 teaspoon distilled vinegar, 1/2 teaspoon kosher salt, 1 teaspoon water, 1 teaspoon garlic purée, 1/2 teaspoon black pepper, 1/4 cup cream cheese and one teaspoon blue agave.
On a cookie sheet, roll out the pizza dough.
Spread the cheese mixture out onto the dough.
Add the veggies on top of the cheese mixture. Spread the veggies out evenly over the pizza.
Put the pizza in the oven for 20 minutes.
Let cool for the kids before serving.
Notes: Cut the piece into kid sized slices.

- 1 Green onion green part only
- 1/4 cup Parmesan cheese
- 1 tsp vinegar Distilled
- 1/2 tsp Kosher salt
- 1 tsp Water
- 1 tsp Garlic purée
- 1/2 tsp Black pepper
- 1/4 Cup cream cheese
- 1 tsp agave
- 1 Cup Broccoli chopped
- 1 Cup Carrots shredded
- 1 Cup Tomatoes sliced
Instructions
