This week I made Low-Calorie Pumpkin Mojito as part of a sponsored post for Socialstars. I am excited that Fall is finally here and I am super excited to incorporate pumpkin and other fall ingredients into my favorite recipes. The first thing that came to mind was a Pumpkin Mojito.
The first time I had a mojito was on South Beach, Miami served in a pitcher with sugar cane sticks. It was delicious, but oh so fattening. These days I am all about the low calorie cocktail. I used my favorite zero calorie sweetener, Sweet ‘N low instead of sugar in Pumpkin Mojito. It helps reduce calories in drink recipes. You can enjoy the sweetness you love without the extra calories. Bonus!! Sweet ‘N Low is also diabetic friendly.
Low-Calorie Pumpkin Mojito Recipe
Ingredients
20 mint leaves
6 Packets Sweet ‘N Low
10 oz aged rum
3/4 Cup Pumpkin Puree
4 Limes, juiced
1 Liter Club Soda
Instructions
Muddle the mint leaves, Sweet ‘N Low packets, and pumpkin puree in the bottom of pitcher.
Add the aged rum and lime juice.
Add ice and stir until thoroughly mixed and chilled.
Top with 1 Liter of Club Soda.
