When I discovered Watermelon flavored cake mix
, I knew that I had to make watermelon cupcakes.

I know it may seem like a cop out, but it is so much easier to use the boxed cake mix! It saves so much time to just use a box. Usually, only the kids and some parents eat the cupcakes. They are mostly focused on the delicious homemade frosting.
This cupcake recipe will make about 20 to 24 cupcakes. This depend on how much you fill up the muffin tin. If you are making them for toddlers, you can make mini cupcakes instead.
Watermelon Cupcakes Recipe
Ingredients
3 large eggs
1 cup skim milk
Directions
Preheat oven to 350 degrees
In a large mixing bowl, combine all ingredients and using a hand mixer, mix on medium speed until well combined.
Line cupcake tray with 2 cupcake liners

) and bake for 20 minutes.

Let cool for 5 minutes, then remove from the pan.
Wait until the cupcakes are completely cool before frosting them.
Frosting Ingredients
1 cup unsalted butter softened
3 cups powder sugar
1 tsp lime extract
1-3 drops leaf green gel coloring
2-5 tbsp Heavy Whipping Cream
Directions for frosting
Combine all ingredients into a standing mixing bowl and mix on low speed till stiff peaks form.
Frost onto cooled cupcakes with cupcake frosting bag
and enjoy.
