We decided to eat healthier recently and I can tell you from the onset of this choice, I am not going to just be eating salads. I fell like salad is so boring so much so that I am bored by them already.
I talked to my foodie friends about this and they suggested I get a spiralizer. Luckily enough, my mom gave me one for Christmas last year.
At the time, I thought it was cool, but it still ended up staying in the box. When I decided to start spiralizing, I had my husband hunt for the “tacky AS SEEN ON TV yellow box” that the spiralizer was in.
He found it immediately! LOL They use that packaging for a reason. Once I got it out of the box, the spiralizer was amazing and more compact than I expected.
My first vegetable that I spiralized was the zucchini. First, let’s start with the fact that zucchini helps you lose weight because it is low in calories, high water content and full of fiber.
This makes you feel full for longer so that you don’t go running to your next meal. Zucchinis are filled with vitamins and nutrients like: manganese, vitamin C, vitamin A, folate, potassium, copper, and phosphorus .
This summer squash also has a high content of omega-3 fatty acids, zinc, niacin, and protein. Moreover, vitamin B1, vitamin B6, vitamin B2, and calcium in zucchini assure optimal health.
It is probably the best example of squash that has such a rich array of nutrients, including sugar, carbohydrates, soluble and insoluble fiber, sodium, minerals, amino acids and more.
The folate ingredient of zucchini is highly commendable for pregnant women as well.
Mediterranean Zucchini Pasta Noodles
Ingredients
- 3 Large Zucchini, shredded into zoodles
- 6 oz Frozen Artichoke Hearts
- 1 Cup Grape Tomatoes, sliced in half
- 1/2 Cup Kalamata Olives, chopped
- 1/2 Cup Fresh Basil, chopped
- 1/4 Cup Oregano, chopped
- 1 Tbsp Roasted Red Pepper, diced
Mediterranean Dressing
- 2 Tbsp Extra Virgin Olive Oil
- 1/2 Tbsp White Vinegar
- 1 Garlic Clove, grated
- 1/2 tsp Pink Himalayan Sea Salt
- 1/8 tsp Fresh Ground Black Pepper
- 1 Lemon, zested & juiced
- 1/8 tsp Red Pepper Flakes
How to Make Mediterranean Zucchini Salad?
Wash and chop all vegetables.
Zest and juice the lemon and grate the garlic using a microplane.
Use the spiralizer to make zucchini noodles.
In a large bowl, add all the ingredients and toss the pasta together.
Place in the fridge for 20 minutes.
Serve cold.
