Ginger is one of those amazing foods that we all need to eat more. I remember reading a long time ago that it is paired with sushi because it helps you digest the sushi quickly so that if there is anything wrong with the fish, it will not affect you. Sounded like a pretty cool food to me. I did some research and it really does help with digestion.
Since ginger has so many health benefits, I like to throw it into my recipes wherever I can. According to my research, it has some anti-inflammatory properties. Anti-inflammatory meds are know for reducing inflammation (duh!) and thereby reducing pain like headaches and back aches and all the aches! I use them quite often and am excited to try something natural. I’ll report back and let you know if it helps me!
Ginger also helps ward off certain cancers and tons more benefits that some asian cultures have been gaining the benefits from for centuries. I know that you will love this Slow Cooked Ginger Chicken because it is easy and healthy without having to break your back in the kitchen! You might not even need the anti-inflammatory properties. š This recipe goes great with my Ginger Tomato Chutney.
Crock Pot Ginger Chicken Recipe
Ingredients
4 Chicken Breasts
2 Cups Low Sodium Chicken Broth
1 Lemon, zested
1/2 Onion, chopped
2 Garlic Cloves, chopped
1/4 Cup Ginger, chopped
1 Tbsp Salt
Instructions
Start by washing chicken and patting dry.
Salt the chicken, dice and chop the onion, garlic and ginger. Zest the lemon with Zester (last used here for an Almond Cold Slaw Recipe.
Pour the ingredients into the slow cooker – 2 Cups Low Sodium Chicken Broth, 1 Lemon, zested, 1/2 Onion, chopped, 2 Garlic Cloves, chopped, and 1/4 Cup Ginger, chopped.
Submerge the chicken in the slow cooker liquid.
Set the slow cooker on high for 4 hours or low for 8 hours.
Use a stained ladle to pull the chicken out of the liquid.
I usually serve this dish with Tomato Ginger Chutney on top. It’s great on its own, but it is made even better with the chutney! The ingredients compliment each other so you won’t have to grab anything extra!
