Woo Hoo! It is National Ice Cream month! Today, I made Heart Ice Cream Sandwiches for me and my daughter. I felt like it was time to think outside the carton and create a unique ice cream creation that both my daughter and I would love. She loves hearts and pink and purple everything. No matter what it is, it has to be pink and purple. I used my imagination and decided to put together a heart ice cream cookie sandwich with pink and purple sprinkles! 

 

I stopped in the baking section of Walmart and found tons of cool cookie cutters. They have so many to choose from that it was hard to pick just one! You can choose from everything from Stars, flowers, animals, and even bows. They have big boxes of cookie cutter or you can buy the individually. My favorite is the Grippy cookie cutters because the kids can help without worrying about metal edges.

 

You could easily make your own cookies, but I decided to buy a plain cookie cake and cut out my shapes from the cake. There are frosted cookie cakes out in the Walmart bakery, but if you ask them, they will grab a plain one from the back.

Ingredients

  • 8 Chocolate Chip Cookies
  • 4 scoops Ice Cream
  • Sprinkles

Instructions

  • Use the heart-shaped cookie cutter to punch out 8 hearts out of the cookie cake. You can also us pre-made heart cookies. 
  • Scoop Breyers Natural Vanilla Ice Cream into the center of 3 cookie hearts. Use another heart to make a heart ice cream cookie sandwich.
  • Sprinkle purple and pink sprinkles by hand on top of the ice cream sandwiches.
  • Serve immediately.

Notes

If you want to make these ahead of time, you can freeze them laying on a plate or cookie sheet. Immediately, place the sandwiches in the freezer after stuffing them.

  1. Breyer’s has always been my favorite type of ice cream. It is part nostalgia, part quality, and part taste! It is the only type of ice cream that my mom would buy while I was growing up, and the flavors and quality are awesome!
